This Sunday I made Cornish game hen which can be found on pg. 26 of Thomas Keller’s Ad Hoc at Home. The cookbook was a holiday present from my uncle and aunt. The dish, while taking some time, was not too hard. It was like some of the other poultry recipes I have made. The game hens tasted similar to chicken, as they are in the same family as a chicken, but they were smaller. The hens were not seasoned on the outside of the skin, but under the skin. I added a lemon gremolata butter which kept the hens juicy after cooking. The hens were so juicy that a sauce was not needed. The butter juices from the chicken were good enough. The leak bread pudding was also made from Ad Hoc at Home and can be found on pg 211. The bread pudding was pretty good. As opposed to a normal bread pudding, this pudding was savory. The leaks were very tender. Since I didn’t have enough leaks, I added some extra onions. For the bread pudding, I used brioche bread, which turned out to be great. While the bread was not the 1in x 1in x 1in cube that was called for in the recipe, the pudding still turned out fine. The vegetables I made consisted mainly of broccoli and carrots. This side dish was very easy, as the bacon was cooked, and then the fat was used to cook the vegetables. Then the bacon was added back. This dish was extremely quick and turned out pretty good.
