For this week’s post, I am posting Thanksgiving dinner. All of this was made on Thursday, Thanksgiving. I made a Turkey with coriander, cumin, cinnamon, and smoked sweet paprika. The turkey was surprisingly juicy and the skin was extremely crispy. Everyone in the family said it was one of the best turkeys they ever had. Most of the time for the turkey was in the oven, but besides marinating overnight, it didn’t take a lot of work. With the turkey, I made a gravy from the pan juices, vermouth, and Cognac. The gravy was good, but because the turkey was so good on its own, it wasn’t needed. I also made cauliflower with breadcrumbs, onions, and hot red peppers. I made this dish before, and both times it was good. In addition, I made my great grandmother’s stuffing. The key difference from standard stuffing is Portuguese Chouriço Sausage which added lots of flavor because it has a lot of fat that flavored the stuffing. I made two vegetable dishes. The first is green beans with almonds. The second is tri-color carrots that have been cooked in orange juice and brown sugar, so they are almost candied. I also made potatoes, which were pan-fried in butter and oil. The last dish I made was homemade cornbread. I didn’t make it in a cast-iron skillet, but it was still good. To accompany it, I made a honey lavender butter that was sweet, but could have used some more honey.
