This week’s entry is red velvet cupcakes. The recipe I used from the Flour cookbook on page 168 is actually for a red velvet cake, but I thought it would be a good idea to make cupcakes instead. The cooking time varies, but I found around thirty minutes for the cupcakes worked. This recipe used a surprising amount of red food coloring to make the red velvet. This was actually my first time making cupcakes. I made two dozen. Instead of a traditional cream cheese frosting, I used the creamy vanilla frosting from the cake recipe. I decided to do the frosting in two different colors — a base of white frosting with a red ribbon around it. The two colors of frosting taste the same since the only difference between them was red food coloring. These cupcakes turned out really well. They were gone in two days!
